Effective pricing strategies are essential in grocery retail, especially for perishable products, where well-timed price adjustments influence both consumer demand and inventory efficiency. Traditional models often fail to account for key challenges such as product cannibalization, the need for differentiated discounting among various items, and the constraints of static, single-period pricing. This research proposes a dynamic pricing framework designed to optimize pricing decisions across multiple perishable products, continuously updating prices throughout their shelf life. Our findings indicate that a multi-product dynamic pricing approach outperforms strategies focused on individual products, leading to higher revenues and lower relative waste levels.
